Then gather the ingredients for this classic comfort food recipe from Thailand: luscious Tom Kha Gai (Thai Coconut Chicken Soup), tender chicken cooked with creamy coconut milk and infused with Thai lime leaves, lemongrass and galangal.

This classic soup can be converted to a vegan version. Just omit the chicken and use water instead of chicken stock.

Tom Kha Gai
Ingredients:
3 lemongrass stalks (use the pale part)
1 oz galangal
3 cloves garlic
8 chili peppers
10 Thai Lime Leaves
1 red shallot
9 oz chicken stock
½ cup water
2 tbsp fish sauce
1 cup coconut milk
1 oz palm sugar
4 chicken breasts
2 oz mushrooms
1 tomato
chopped coriander for garnish
1 key lime
